Peanut Butter Fudge Pie with Pretzel Crust

 

 

 

 

 

 

 

 

Wow! Don't say that I didn't warn you! Highly addictive. Easy to put together and I cannot stop eating it! I am thinking of making this for my husband's bday.  I am sure he would love it! Who wouldn't sweet and salty all in one bite!

Peanut Butter Fudge Pie with Pretzel Crust

Ingredients

3/4 cup crushed pretzel
1/2 cup all-purpose flour
2 tablespoons sugar
1 stick (1/2 cup) butter, melted

1 cup hot fudge sauce, plus extra for drizzling 
3/4 cup sugar 
1/3 cup cornstarch 
1/2 cup peanut butter chips
2 tablespoons creamy peanut butter
1 cup milk 
1 cup heavy cream  
3 egg yolks 
2 tablespoons butter 
1 tsp vanilla 


Instructions

1. Make the crust by stirring together the crushed pretzel, flour, and sugar in a mixing bowl. Add in the melted butter and stir until combined. Press the crust mixture into a 9 inch pie pan. Bake at 350 degrees for 10-12 minutes. Remove from oven and let cool .

2. Pour 1 cup hot fudge sauce into the baked, cooled pie shell. Spread out to cover the bottom and smooth. Set aside.  You can also sprinkle chocolate chips white or milk chocolate chips over crust and bake at 250 for 5 minutes. Spread over crust.

3. Combine sugar, cornstarch, milk, cream, peanut butter chips, and peanut butter in a medium saucepan. Cook over medium heat, stirring constantly ,until mixture begins to bubble. This will take several minutes. Once it bubbles continue stirring for 2 minutes. The mixture will begin to thicken. 

4. Mix a little of the hot mixture into the egg yolks (do this part quickly), beating quickly to avoid cooking the yolks with the hot liquid. Stir the warm yolk mixture back into the remainder of the peanut butter mixture and cook for an additional 90 seconds. Remove from heat and stir in the butter and vanilla and continue stirring until butter is melted and mixture is smooth. 

5. Pour peanut butter custard into the pie shell over the fudge sauce. Allow mixture to cool for 30 minutes before putting it in the refrigerator to finish cooling. Let it cool in the refrigerator for at least 2 hours before serving. 

6. I like to garnish with mini reese's cups!

  Walnut Crumb Topped Apple Pie

So what screams fall dessert? Apple pie!  My family and I picked apples last weekend and we decided to put them to good use in this pie.  You can use all Granny Smith or like we did, mix it up.  I also used several of the different apples we picked, but just kept it to 6 cups total apples.  I don't know which types we used, but they were all firm and crunchy.  Soft apples don't hold up in this pie.  Anyway, the pie is now a memory....gobbled up by my family!  Maybe, we'll pick some more apples this weekend.  Enjoy!

 

Ingredients

  • 1 Crust from 15 ounce package rolled refrigerated unbaked pie crust
  • 2 teaspoons butter, melted
  • 6 cups peeled, cored, and thinly sliced Granny Smith apples ( about 2 1/4 lbs)
  • 2/3 cup sugar
  • 2 tablespoons all-purpose flour
  • 2 -3 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • Walnut Crumb Topping (recipe follows)
  • Vanilla Ice Cream (optional)

Directions

  1. Let pie crust stand according to package directions. Unroll pie crust; place into a 9-inch pie plate. Tuck pie crust under and flute edges. Do not prick pie crust. Brush the pie crust bottom and sides with the melted butter; set aside.
  2. For filling: In a large bowl, combine the apples. In a small bowl, stir together sugar, flour, cinnamon and salt. Sprinkle sugar mixture over the fruit. Toss to combine. Let stand for 10 minutes. Transfer apple filling to pastry-lined pie plate. Mound the Walnut Crumb Topping over filling.
  3. To prevent overbrowning, cover edge of pie with foil. Place the pie on the center rack of a 375 degree F. oven. Place a large baking sheet covered with foil on a rack under the pie. Bake for 30 minutes. Remove foil. Bake for 35 to 40 minutes more or until apples are tender, filling is bubbly and topping is golden.  Serve with ice cream. 

Walnut Crumb Topping

Ingredients

  • 3/4 cup walnuts
  • 1/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1/2 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 6 tablespoons cold butter, cut into 1/4-inch-thick slices

Directions

  1. In a food processor combine walnuts, sugar, and brown sugar. Cover and process to grind the walnuts. Remove the lid; add flour, oats, salt and cinnamon. Cover and process until combined. Remove the lid; sprinkle butter over the flour mixture. Cover and process until mixture resembles coarse crumbs; transfer to a large bowl; rub the crumbs between your fingers to make large, buttery crumbs.   Adapted from Midwest Living.

Marshmallow Meringued Pumpkin Cream Cheese Pie

Ingredients

  • 1 (8-ounce) package cream cheese, softened
  • 2 cups canned pumpkin, mashed
  • 1 cup sugar
  • 1/4 teaspoon salt
  • 1 egg plus 2 egg yolks, slightly beaten
  • 1 cup half-and-half
  • 1/4 cup (1/2 stick) melted butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger, optional
  • 2 piece pre-made pie shells

Directions

Preheat the oven to 350 degrees F.
Pre-bake pie shells for 10 min.
For the filling, in a large mixing bowl, beat the cream cheese with a hand mixer. Add the pumpkin and beat until combined. Add the sugar and salt, and beat until combined. Add the eggs mixed with the yolks, half-and-half, and melted butter, and beat until combined. Finally, add the vanilla, cinnamon, and ginger, if using, and beat until incorporated.
Pour the filling into the warm prepared pie crust and bake for 50 minutes, or until the center is set. Place the pie on a wire rack and cool to room temperature. Cut into slices and top each piece with a generous amount of whipped cream.
Marshmallow Meringue
3 egg whites
1/2 tsp vanilla extract
Pinch of salt
1/4 cup sugar
1 -7oz. jar of marshmallow creme

Beat egg whites, vanilla and salt at high speed until foamy. Gradually add sugar 1 tbsp at a time, beating until stiff peaks form.

Beat in 1/4 of the marshmallow creme. Repeat with remaining creme until meringue is well mixed and fluffy.

Heap meringue in the middle of the cooled pie and swirl with the back of a spoon or spatula. (I used a fork for stripes.) Bake at 400 until browned

Pumpkin Pie





Pumpkin Pie
Yield: One 9-inch pie
Prep Time: 2 hours (including crust) | Bake Time: 55 to 70 minutes
1 recipe for single pie crust
1 cup heavy cream
1 cup whole milk
3 eggs plus 2 egg yolks
1 teaspoon vanilla extract
1 (15-ounce) can pumpkin
1 cup drained candied yams (from 15-ounce can)
¾ cup granulated sugar
¼ cup maple syrup
2 teaspoons grated fresh ginger
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 teaspoon salt
1. Prepare the crust and refrigerate for at least 1 hour.
2. Adjust the oven rack to the lowest position, place a rimmed baking sheet on the rack, and heat the oven to 400 degrees F. Remove the dough from the refrigerator and roll it out on a lightly floured work surface to a 12-inch circle about 1/8 inch thick. Roll dough loosely around rolling pin and unroll into pie plate, leaving at least 1-inch overhang on each side. Working around circumference, ease dough into plate by gently lifting edge of dough with one hand while pressing into plate bottom with other hand. Refrigerate 15 minutes.
3. Trim overhang to ½ inch beyond lip of pie plate. Fold overhang under itself; folded edge should be flush with edge of pie plate. using thumb and forefinger, flute edge of dough. Use a fork to prick the dough all over the bottom and sides of the pie plate. Refrigerate dough-lined plate until firm, about 15 minutes.
4. Remove pie pan from refrigerator, line crust with aluminum foil or parchment paper, and fill with pie weights or dried beans, filling the whole way up to the rim of the pie plate. Bake on rimmed baking sheet 15 minutes. Remove foil/parchment and weights, rotate plate, and bake 5 to 15 additional minutes until crust is golden brown and crisp. Remove pie plate and baking sheet from oven.
5. While the pie shell is baking, whisk cream, milk, eggs, yolks and vanilla together in a medium bowl. Combine the pumpkin, yams, sugar, maple syrup, ginger, cinnamon, nutmeg and salt in a large heavy-bottomed saucepan; bring to a sputtering simmer over medium heat, 5 to 7 minutes. Continue to simmer pumpkin mixture, stirring constantly and mashing yams against sides of pot, until thick and shiny, 10 t0 15 minutes.
6. Remove the pan from heat and whisk in the cream mixture until fully incorporated. Strain the mixture through a fine-mesh strainer set over a medium bowl, using the back of a ladle or spatula to press solids through strainer. Rewhisk mixture and transfer to warm prebaked pie shell. Return pie plate with baking sheet to oven and bake pie for 10 minutes. Reduce heat to 300 degrees and continue baking until edges of pie are set and the center looks firm but jiggles slightly (instant-read thermometer inserted in center registers 175 degrees), 20 to 35 minutes longer. Transfer pie to wire rack and cool to room temperature, 2 to 3 hours. Serve with whipped cream.

Banoffee Pie {Caramel Banana Cream Pie}



Banoffee Pie {Caramel Banana Cream Pie}

Ingredients:
1 graham cracker crust
3 Bananas sliced
1 can sweet condensed milk
1 cup whipping cream whipped with 1-2 TB powdered sugar until stiff peaks form
To make the caramel or Dulce de Leche:
Stove Top Method: Remove the label from can of sweet condensed milk. Put in pot and cover completely with water. Bring to a boil and reduce heat to a simmer. Cook for 2 1/2 hours. Be sure to keep the can totally covered in water to be safe. The can will burst if it is not completly covered in water the whole time! Be careful!! When cooled enough that you can handle with can with your bare hands, it is safe to open.
Crock Pot Method: Take the label of the can and place in crock pot. Cover completely with water. Put lid on and cook on low for 8-10 hours. Just once again make sure there is plenty of water and the cans are covered the entire time! Cool before opening.
Oven Method: Open can of sweet condensed milk and pour into a glass pie plate. Cover with tin foil. Place in a roasting pan and fill pan halfway with water. Place in a 300 degree oven and bake for 40 minutes or until is a rich caramel color.
Banoffee Pie (Caramel Banana Cream) Directions:
Slice the bananas into your pie shell. It does not matter how, just make sure it is somewhat even. Pour the cooled caramel over the banana slices. Cover in sweet whipped cream and garnish with shaved chocolate. Viola! That is it and you have a MAGICAL incredible dessert! Enjoy:)

Apple Pie Filling











Apple Pie Filling
Recipe from the National Center for Home Food Preservation
Recipe as written below is for 7 quarts of apple pie filling. Click here, or see image above for measurements that yield just one quart (you can calculate from there depending on how many jars you wish to make, or according to how many apples you have.)
Ingredients
6 quarts Blanched, sliced fresh apples
5 1/2 cups granulated sugar
1 1/2 cups Ultra Gel or Clear Jel
1 tablespoon ground cinnamon
1 teaspoon ground nutmeg
2 1/2 cups cold water
5 cups Apple Juice
3/4 cups bottled lemon juice
Instructions
Use firm, crisp apples. If apples lack tartness, use an additional 1/4 cup of lemon juice for each 6 quarts of slices.
Yield: 7 quarts
Wash, peel, and core apples. Prepare slices 1/4-1/2 inches wide and place in cold water containing 1/4 cup lemon juice for every 4 cups water (or water containing ascorbic acid) to prevent browning.
For fresh fruit, place 6 cups at a time in 1 gallon of boiling water. Boil each batch 1 minute after the water returns to a boil. Drain, but keep heated fruit in a covered bowl or pot. Combine sugar, spices, Ultra Gel, and spices in a large kettle with water and apple juice. Stir and cook on medium high heat until mixture thickens and begins to bubble. Add lemon juice and boil 1 minute, stirring constantly. Fold in drained apple slices immediately and fill jars with mixture without delay, leaving 1 inch headspace. Adjust lids and process immediately in a waterbath according to the recommendations below.
Processing time for pint or quart size jars: 0-1000 ft: 25 min, 1001-3000 ft:30 3001-6000 ft: 30 mins Above 6000 ft: 40 mins
Freezer Instructions: Alternately this recipe can be placed in freezer bags and frozen for several months. Place approximately 4 cups apple mixture to fill one standard size pie.

Blueberry Tart

Ingredients

  • flour for the work surface
  • 1 8-ounce sheet frozen puff pastry, thawed
  • 1 large egg, beaten
  • 1 tablespoon granulated sugar
  • 4 ounces cream cheese, softened
  • 1/4 cup heavy cream
  • 1/2 teaspoon grated lemon zest
  • 3 tablespoons confectioners' sugar
  • 2 cups blueberries

Directions

  1. Heat oven to 375° F. On a lightly floured surface, unfold the sheet of pastry and roll it into a 10-by-12-inch rectangle. Transfer to a parchment-lined baking sheet.
  2. Using the tip of a knife, score a 1-inch border around the pastry without cutting all the way through. Brush the border with the egg and sprinkle with the granulated sugar. Bake until golden and puffed, 18 to 22 minutes.
  3. Using the tip of a knife, rescore the border of the cooked pastry without cutting all the way through. Gently press down on the center of the pastry sheet to flatten it. Let cool to room temperature, 15 to 20 minutes.
  4. Meanwhile, with an electric mixer, beat the cream cheese until smooth. Add the cream, lemon zest, and 2 tablespoons of the confectioners’ sugar and beat until smooth. Spread the cream cheese mixture evenly within the borders of the pastry.
  5. Arrange the blueberries in a single layer over the filling and sprinkle with the remaining tablespoon of confectioners’ sugar.

Fresh Strawberry Pie









Fresh Strawberry Pie

1 9-inch pie crust, baked
2 pounds fresh strawberries, rinsed and hulled
1/2 cup granulated sugar
2 1/2 teaspoons cornstarch
1 1/2 teaspoons lemon juice, freshly squeezed
1/8 teaspoon salt
1 envelope unflavored powdered gelatin
2 tablespoons cold water

Slice about 3 cups of the strawberries into quarters and place them in a medium bowl. Crush the berries with a potato masher or a fork; you should have about 1 1/2 cups crushed berries. Place them in a saucepan over medium heat with the sugar, cornstarch, lemon juice and salt and stir to combine. Bring to a simmer, stirring occasionally for about 5-7 minutes, until the mixture begins to thicken slightly.

Soften the gelatin in the cold water and set it aside.
Remove berry mixture from the heat and add the softened gelatin and stir until the gelatin has dissolved. Set aside to cool.

Cut the remaining berries into quarters, and gently fold them into the cooled cooked mixture (if you want, you can reserve some of the strawberries to arrange on top of the pie for a more decorative presentation). Pour the filling into the baked pie shell, and chill in the refrigerator until set, at least 2 hours or overnight before serving. Makes 1 pie (I doubled the recipe for 2 pies).

Serve with fresh whipped cream if desired.

Banana Split Cream Pie

*Note: I like to use chocolate Teddy Grahams for the cookie base. They are cheaper and easier to find then the oft-cited Famous Nabisco Wafers. Also, since I know someone might wonder, you could probably get away with using a pie dish instead of a springform pan but it would need to be a large 10-inch pie dish with fairly deep sides or you’ll run the risk of not having enough room for the layers.
*Makes one 10-inch pie, about 10 servings
Chocolate Crumb Crust:
3 cups (about 8 ounces) lightly broken chocolate crackers/cookies
1/3 cup chopped pecans
3 tablespoons granulated sugar
10 tablespoons butter, melted

Banana Cream Filling:

3 tablespoons water
1 1/2 teaspoons unflavored gelatin
5 large egg yolks
2/3 cup granulated sugar
1/3 cup plus 1 tablespoon cornstarch
1/8 teaspoon salt
2 3/4 cups milk
2 tablespoons butter
1/2 teaspoon rum extract
4 medium firm, ripe bananas

Strawberry-Raspberry Whipped Cream:

1/2 cup quartered fresh strawberries (stemmed)
1/2 cup fresh raspberries
1/4 cup granulated sugar
1 cup cold heavy whipping cream
Preheat the oven to 350 degrees, making sure an oven rack is in the center of the oven. Lightly grease a 10-inch round springform pan with at least 2-inch sides with nonstick cooking spray.
In a blender or food processor, combine the cookies, sugar and pecans and process until the crumbs are fine. Pour in the melted butter and process until the mixture is evenly coated with butter. Press the cookie mixture into the prepared pan evenly over the bottom and about 1 inch up the sides. Bake the crust for 10 minutes. It will firm up as it cools. Transfer it to a wire rack and let it cool completely.
For the filling, pour the water into a small dish and sprinkle the gelatin over the water, letting it sit for 5 minutes to soften. Rest a fine mesh strainer over a large bowl and set aside. In a medium bowl, whisk the egg yolks until blended. In a medium saucepan, whisk together the sugar, cornstarch and salt. Gradually pour in the milk while while whisking constantly. Place the saucepan over medium heat and cook, stirring slowly and often with a silicone spatula or whisk until the mixture just begins to bubble and thicken, about 6 to 8 minutes. Continue to cook, slowly stirring, for about 1 minute longer. Remove the pan from the heat.
Pour about 1/3 of the hot mixture into the egg yolks, stirring vigorously to combine. Pour the egg yolk mixture back into the saucepan, whisking quickly, and return it to medium-low heat. Cook, stirring constantly, until the mixture is thick and somewhat bubbly, about 2 to 3 minutes.
Remove from the heat and immediately pour the custard through the fine mesh strainer. Stir in the butter, softened gelatin, vanilla and rum extract into the strained custard and stir until thoroughly blended and butter is melted. Immediately cover the custard with plastic wrap directly on the surface to prevent a skin from forming. Poke a few vent holes in the plastic wrap with a sharp knife and set aside at room temperature until it cools to lukewarm about 10-15 minutes.
Meanwhile, peel three of the bananas and slice them into about 1/4-inch slices, layering the slices in the bottom of the crumb crust. Cover the bottom of the crust completely. Pour the warm custard over the banana slices, spreading to cover them evenly. Press a piece of plastic wrap directly on the surface of the filling and refrigerate the pie for 2-3 hours before serving.
Up to an hour before serving, combine the strawberries, raspberries and the sugar in a medium bowl and mash the mixture lightly with a fork. Pour 1/2 cup of the cream on top. Whip the ingredients with a hand mixer (or using an electric stand mixer) until the berries are partially crushed and mixed into the cream, about 1 minutes. Add the remaining 1/2 cup cream and continue to whip on medium speed until soft peaks form.
Peel the remaining banana and cut it into very thin slices, scattering the slices over the chilled pie filling. Spread the berry whipped cream over the sliced bananas. Refrigerate until ready to serve. The pie presents best the same day it is made so the bananas aren’t overly browned, although the leftovers we had tasted great and looked pretty good the next day, so you could probably make it the day before with good results – spreading the berry whipped cream an hour before serving.
To serve, gently remove the sides of the springform pan, cut the pie into wedges and transfer to dessert plates.

Malted Milk Cookie Tart









Malted Milk Cookie Tart Adapted from Bon Appetit

Ingredients

1 1/2 cups all-purpose flour

1 cup malted milk powder

1/2 cup sugar

1 teaspoon (scant) coarse kosher salt

3/4 cup unsalted butter, cut into 1-inch pieces, room temperature

3/4 cup bittersweet chocolate chips (do not exceed 61% cacao)

1/2 cup malted milk balls, coarsely chopped


- Preheat oven to 325°F. In a food processor, pulse the flour, malted milk powder, sugar, and coarse salt. Add the butter and pulse until moist clumps form.



- Transfer dough to work surface; gather into ball. Press evenly onto bottom of 9-inch-diameter tart pan with removable bottom.



- Bake crust until evenly golden brown, about 25 minutes. Scatter chocolate chips over; let stand 5 minutes to soften…

 

…then spread melted chocolate over hot crust in the well that forms as center sinks.


 

- Sprinkle malted milk balls over.

 

- Cool completely. Remove tart from pan; cut into wedges.

Decadent Brownie Pie




Decadent Brownie Pie
For the brownie layer:
2/3 cup butter, melted
1 1/4 cups sugar
1/2 cup light corn syrup
2 eggs
1 1/4 cups all-purpose flour
1/2 cup cocoa
1/2 teaspoon salt
3 tablespoons milk

For the ganache:
1 cup heavy whipping cream
12 ounces semisweet chocolate, chopped

In a large bowl, add melted butter, sugar and corn syrup. Whisk to combine. Add eggs, one at a time, beating well after each addition. Combine the flour, cocoa and salt in a separate bowl; gradually add to the butter mixture alternately with milk, beating well after each addition. Spread batter into a greased 10-inch springform pan. Bake at 325° for 35-40 minutes or until a toothpick inserted 1 inch from side of pan comes out clean. Cool on a wire rack.

For the ganache: In a small saucepan, bring cream to a boil. Remove from the heat and pour in chocolate; let sit for 3-4 minutes, then stir until smooth. Set aside about 10 minutes until slightly cool. Pour ganache over brownie layer and refrigerate until ganache is completely set.

Take out of the fridge about 30 minutes before serving and let it sit at room temperature. Garnish as desired.

Chocolate Chip Cookie Pie









Chocolate Chip Cookie Pie
Recipe from Nestle

1 unbaked 9-inch pie crust, homemade or store-bought.
2 large eggs
1/2 C flour
1/2 C white granulated sugar
1/2 C packed brown sugar
3/4 C real butter, softened (1 1/2 sticks)
1 C chocolate chips (semi-sweet or dark works best, you might find milk too sweet)
1 C chopped pecans (you are welcome to make it without nuts)

Vanilla ice cream, or sweetened whipped cream for serving (a must!  I prefer ice cream)
optional: chocolate sauce (honestly, doesn't really need chocolate sauce, but it looks pretty!)

Preheat oven to 325° F.

Beat eggs in large mixer bowl on high speed until foamy. Beat in flour, granulated sugar and brown sugar. Beat in butter. Stir in morsels and nuts. Spoon into pie shell.

Bake for 55 to 60 minutes or until knife inserted halfway between edge and center comes out clean. Cool on wire rack or serve slightly warmed.  Serve with ice cream or whipped cream.

Dough:
1/2 cup butter, softened
2/3 cup granulated sugar
1 large egg
1 teaspoon pure vanilla extract
Zest of 1 lemon, divided (use the other half for the frosting)
1 1/4 cups all-purpose flour
1 teaspoon cream of tartar
1/2 teaspoon baking soda
1/4 teaspoon salt
Frosting:
1 package (8 ounces) cream cheese, softened
2 tablespoons granulated sugar
1/2 cup powdered sugar
1 teaspoon pure vanilla extract
Fresh lemon juice from 1 lemon (1-2 tablespoons)
Other half of lemon zest from above
Fresh Fruit:
Strawberries
Raspberries
Blueberries
Pineapple
Peaches
Kiwi
Preheat the oven to 350 degrees F. Spray a 10-inch round or tart pan with nonstick cooking spray. This will give a fairly thick crust. If you want a thinner crust, try using a larger pizza pan shape or a 9X13-inch pan (you’ll have to test this out since I’ve only used a 10-inch tart pan).
For the dough, in a large bowl, cream together the butter and granulated sugar until smooth. Mix in egg, vanilla, and 1/2 of the lemon zest. Add the dry ingredients and mix until just blended. Press the dough into the prepared pan.
Bake the dough for 10-12 minutes, or until very lightly browned. Don’t overbake as the crust will become dry. Cool the crust on a wire rack completely.
In a medium bowl, beat the cream cheese until smooth. Add the granulated and powdered sugar, vanilla, lemon juice, and other half of the lemon zest. Spread on the cooled pizza crust to within 1/4-inch of the edges. Arrange fruit on top of the pizza. Cover lightly with plastic wrap and chill until serving time.

Cookie Dough Pie

Ingredients:
15.25 ounce package Original Chips Ahoy Cookies (not the chewy kind)
8-12 ounces Cool Whip or homemade whipped cream
1-2 cups milk
Chocolate Sauce or melted chocolate chips, for drizzle

Directions:
Quickly dip cookies in milk, shake off excess liquid, and layer in 9 inch pie plate, breaking cookies to fill any gaps. *The original recipe calls for 2 cups of milk. I was able to get away with using one, and dipping my cookies at an angle so I wouldn't waste so much milk. Once the first layer is complete, top with a thin layer of Cool Whip. Repeat twice more making last layer of Cool Whip a bit thicker. I used one tub of cool whip and then made more homemade whipped cream because I like to go heavy on everything. Just be sure to go light on your first two layers of whipped cream if you only want to use one container of cool whip, but I recommend using more. It was so good! Garnish with chocolate syrup  or a small amount of melted chocolate chips, if desired. Place in freezer 2-3 hours before serving. Serves 6-8.

*Note- You must dip quickly or your pie will be very soggy. Make sure to shake off all excess milk so that you do not have a puddle of milk in your pie.

Chocolate Peanut Butter Torte

For the crust:
32 Oreo cookies, finely processed into crumbs
5 1/3 tbsp. unsalted butter, melted and cooled
Small pinch of salt
For the crunch:
1 1/4 cups salted peanuts, finely chopped, divided (for the filling, crunch and topping)
1/2 cup mini chocolate chips
2 tsp. sugar
1/2 tsp. espresso powder
1/4 tsp. ground cinnamon
Dash of ground nutmeg
For the filling:
2 cups heavy cream
1 1/4 cups confectioners’ sugar, sifted
12 oz. cream cheese, at room temperature
1 1/2 cups creamy peanut butter (not natural)
2 tbsp. whole milk
For the topping:
1/2 cup heavy cream
4 oz. bittersweet chocolate, finely chopped
Directions:
To make the crust, preheat the oven to 350 degrees F.  Butter a 9-inch springform pan and place it on a baking sheet.  Combine the Oreo crumbs, melted butter and salt in a small bowl.  Toss with a fork to moisten all of the crumbs.  Press into a thin layer covering the bottom and sides of the springform pan.  Freeze the crust for 10 minutes.  Bake in the preheated oven for 10 minutes, then transfer to a wire rack and let cool completely before filling.
To make the crunch, in another small bowl combine 1/2 cup of the chopped peanuts, mini chocolate chips, sugar, espresso powder, cinnamon and nutmeg.  Toss with a fork to mix and set aside.
To prepare the filling, in the bowl of a stand mixer fitted with the whisk attachment, whip 2 cups of the cream until it holds medium peaks.  Beat in 1/4 cup of confectioners’ sugar and whip until the cream holds medium-firm peaks.  Scrape the cream into a separate bowl and refrigerate until needed.
Wipe out (do not wash) the mixer bowl, replace the whisk with the paddle attachment, and beat the cream cheese with the remaining 1 cup of confectioners’ sugar on medium speed until the cream cheese is satiny smooth.  Beat in the peanut butter, whole milk, and 1/4 cup of the chopped peanuts until well combined.
Using a large rubber spatula, gently stir in about 1/4 of the whipped cream just to lighten the mousse.  Still working with the spatula, stir in the crunchy peanut mixture, then gingerly fold in the remaining whipped cream.  Scrape the mousse into the crust, mounding and smoothing the top.  Refrigerate for at least 4 hours or overnight; cover with plastic wrap as soon as the mousse firms.
To finish the torte, put the chopped chocolate in a heatproof bowl set over a saucepan of simmering water.  Leave the bowl over the water just until the chocolate softens and starts to melt, about 3 minutes; remove the bowl from the saucepan.  Bring the 1/2 cup of cream to a full boil.  Pour the cream over the chocolate and, working with a rubber spatula, very gently stir together until the ganache is completely blended and smooth.
Pour the ganache over the torte, smoothing with a metal icing spatula.  Scatter the remaining peanuts over the top and chill to set the topping, at least 20 minutes.  When the ganache is firm, remove the sides of the springform pan.  Refrigerate until ready to serve.

Ingredients

  • 1 unbaked 9-inch deep-dish pie shell
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 3/4 cup (1 1/2 sticks) butter, softened
  • 1/2 cup of Heath toffee bits
  • 1/2 cup of chopped pecans
  • 1 cup (6 oz.) Nestle Semi-Sweet Chocolate Morsels

Directions

PREHEAT oven to 325° F.

BEAT eggs in large mixer bowl on high speed until foamy. Beat in flour, granulated sugar and brown sugar. Beat in butter. Stir in morsels and nuts. Spoon into pie shell.

BAKE for 55 to 60 minutes or until knife inserted halfway between edge and center comes out clean. Cool on wire rack. Serve warm with whipped cream, if desired
