Pizza Pretzel Bites








Pizza Pretzel Bites

Adapted from Bobby Flay
1 1/2 cups warm water
2 tablespoons light brown sugar
1 package active dry yeast
3 ounces unsalted butter, melted
2 1/2 teaspoons kosher salt
4 1/2 to 5 cups all-purpose flour
Canola oil
Pepperoni slices, cut into small pieces
Shredded mozzarella cheese
5 quarts water
3/4 cup baking soda
1 whole egg, beaten with 1 tablespoon cold water
Coarse sea salt
Pizza sauce-for serving
1.  Combine the water, sugar, yeast, and butter in the bowl of a stand mixer and mix with the dough hook until combined. Let sit for 5 minutes.
2. Add the salt and flour and mix on low speed until combined. Increase the speed to medium and continue kneading until the dough is smooth and begins to pull away from the side of the bowl, about 3 to 4 minutes. If the dough appears too wet, add additional flour, 1 tablespoon at a time. Remove the dough from the bowl, place on a flat surface and knead into a ball with your hands.
3. Oil a bowl with canola oil, add the dough and turn to coat with the oil. Cover with a clean towel or plastic wrap and place in a warm spot until the dough doubles in size, about 1 hour.
4. Preheat the oven to 425 degrees F. Bring the water to a boil in a large pot over high heat and carefully add the baking soda.
5. Remove the dough from the bowl and place on a flat surface. Divide the dough into 8 equal pieces, about 4 1/4 to 4 1/2 ounces each. Roll each piece into a long rope measuring 22 inches and shape. Cut the dough into one inch pieces to make the pretzel bites. Roll each bite flat with a rolling pin. Stuff each bite with pepperoni and cheese. Fold over the dough and pinch the ends. Set bites on a baking sheet and continue until all pretzel bites are stuffed.
6. Boil the pretzel bites in the water solution in batches. We did about 15 bites at a time. Boil for about 30 seconds. Remove with a large slotted spoon. Place pretzel bites on a baking sheet that has been lined with parchment paper or a Silpat.  Make sure they are not touching.  Brush the tops with the egg wash and season liberally with the salt. Place into the oven and bake for 15 to 18 minutes, or until golden brown.
7. Remove from oven and let cool for five minutes. Serve warm with pizza sauce.
Makes about 6 dozen pizza stuffed pretzel bites

Thin Crust Cheese Pizza




Thin Crust Cheese Pizza

Yield: 2 13-inch pizzas
Ingredients:
For the crust:
3 cups (16½ oz.) bread flour
2 tsp. sugar
½ tsp. instant yeast
1 1/3 cups ice water
1 tbsp. vegetable oil
1½ tsp. salt
For the sauce:
1 (28 oz.) can whole peeled tomatoes, drained
1 tbsp. extra-virgin olive oil
1 tsp. red wine vinegar
2 cloves garlic, minced or pressed
1 tsp. salt
1 tsp. oregano
¼ tsp. ground black pepper
For topping:
Olive oil, for brushing
½ cup (1 oz.) finely grated Parmesan cheese
2 cups (8 oz.) shredded whole-milk mozzarella
Directions:
To make the dough, combine the flour, sugar, and yeast in the bowl of a food processor* fitted with the metal blade.  Pulse just to combine.  With the machine running, add the ice water through the feed tube and process just until the dough is combined and all dry ingredients are incorporated, about 10 seconds.  Let dough rest for 10 minutes.
Add the oil and salt to the dough.  Process until the dough forms a smooth, tacky ball that clears the sides of the bowl, about 30-60 seconds.  Remove the dough from the bowl, knead briefly on a lightly oiled work surface, about 1 minute.  Transfer to a lightly oiled bowl, cover with plastic wrap and refrigerate for at least 24 hours and up to 3 days.  (After the period of refrigeration, the dough can be wrapped tightly in plastic wrap and frozen for later use.)
To make the sauce, combine all ingredients in a food processor.  Blend until smooth, about 30 seconds.  Transfer to a bowl or container and refrigerate until ready to use.
One hour before baking the pizza, adjust an oven rack to the second highest position and place a baking stone on the rack to preheat.  Preheat the oven to 500˚ F.  Remove the pizza dough from the refrigerator and divide in half.  (If you plan to freeze a portion of the dough, this is the time to wrap in plastic, place in a freezer bag and freeze for later use.) Form each half into a ball and place on a lightly oiled baking sheet.  Spray the dough balls lightly with cookies spray.  Cover loosely with plastic wrap and let sit at room temperature for 1 hour.
To assemble the pizza, transfer a dough ball to a well floured work surface.  Flatten into an 8-inch disk, leaving a slightly thicker edge around the rim.  Using your hands, gently stretch the dough to a 12-inch circle. (I needed to use the rolling pin a bit to get my crust thin enough.) Transfer the dough to a well floured pizza peel and stretch to a 13-inch circle.  Lightly brush the thicker edge of the disk with olive oil.  Spread ½ cup of the pizza sauce over the dough.  Sprinkle evenly with the grated Parmesan and the shredded mozzarella.  Carefully transfer the pizza to the preheated baking stone.  Bake until the cheese is bubbling and slightly browned, 10-12 minutes.  Let cool about 5 minutes before slicing and serving.
*This dough can also be made in a stand mixer or by hand.  Keep in mind, the idea is to avoid warming the dough, so a food processor or mixer is optimal.

Basic Pizza Dough











Basic Pizza Dough
Ingredients:
½ cup warm water (about 110°)
1 envelope (2 ¼ tsp.) instant yeast
1 ¼ cups water, at room temperature
2 tbsp. extra-virgin olive oil
4 cups (22 oz.) bread flour, plus more for dusting
1 ½ tsp. salt
olive oil or non-stick cooking spray for greasing the bowl

Directions:
Measure the warm water into a 2-cup liquid measuring cup.  Sprinkle in the yeast and let stand until the yeast dissolves and swells, about 5 minutes.  Add the room temperature water and oil and stir to combine.  

Place the flour and salt in the bowl of a stand mixer fitted with the paddle attachment.  Briefly combine the dry ingredients at low speed.  Slowly add the liquid ingredients and continue to mix at low speed until a cohesive mass forms.  Stop the mixer and replace the paddle with the dough hook.  Knead until the dough is smooth and elastic, about 5 minutes.  Form the dough into a ball, put it in a deep oiled bowl, and cover with plastic wrap.  Let rise until doubled in size, about 1 ½ to 2 hours.  Press the dough to deflate it.

To bake, place a pizza stone in the lower third of the oven.  Heat the oven to 500° for at least 30 minutes.  Turn the dough out onto a lightly floured work surface.  Divide the dough into two equal pieces.  Form both pieces of dough into smooth, round balls and cover with a damp cloth.  Let the dough relax for at least 10 minutes but no more than 30 minutes.

Working with one piece of dough and keeping the other covered, shape the dough and transfer to a pizza peel or round of parchment dusted with semolina or cornmeal.  Top as desired.  Slide the dough onto the pizza stone.  Bake until the crust edges brown and cheese is golden brown in spots, about 8 to 12 minutes.  Repeat with remaining ball of dough or freeze for later use.

Chicken-Bacon Stuffed Pizza Rolls

1 roll refrigerated pizza dough* (or make your own)
1 packet Hidden Valley Ranch Dressing mix
2 T grated Parmesan cheese
1 T olive oil or melted butter
sharp cheddar cheese (I used 75% sharp cheddar and 25% mozzarella)
8 slices bacon, cooked and crumbled
about 1 C shredded, cooked chicken.
3/4 C mayo
3/4 C milk

First take 1 teaspoon of your ranch dressing mix and combine it with 1 1/2 T parmesan cheese. Set aside. Combine the remaining ranch mix with 3/4 C mayo and 3/4 C milk and place in the fridge to chill.

Preheat oven to heat specified on pizza dough package. Usually it's 400-425 degrees.

Unroll your pizza dough onto a lightly floured surface. Pat or roll the dough so it's about 12" by 8". You're going to want to cut it into 24 squares, so just eyeball it if you need to. Use a pizza cutter to slice the dough into 24 squares.

Place cheese and desired toppings on each square.

Spinoccoli Pizza

Ingredients:
For the white sauce:
1 tbsp. butter
1 tbsp. flour
¾ cup heavy cream or half-and-half
1 clove garlic, smashed
Salt and pepper, to taste
6 tbsp. freshly grated Parmesan cheese
For the pizza:
Pizza dough
Olive oil, for brushing
½ cup packed baby spinach leaves, torn
1 cup very small broccoli florets
2 oz. shredded mozzarella cheese
2 oz. shredded cheddar cheese
Grated Parmesan
Directions:
To make the white sauce, melt the butter in a small saucepan over medium-high heat.  Whisk in the flour and cook, whisking constantly, until bubbling and light golden, about 1 minute.  Whisk in the heavy cream and garlic, and season with salt and pepper to taste.  Cook, stirring frequently, until the mixture thickens and bubbles.  Remove from the heat and whisk in the grated Parmesan until completely melted and smooth.  Discard the garlic clove.  (Note: This will make a bit more sauce than you need for the pizza, but with a little extra cheese it makes a great dipping sauce for crust.)
To make the pizza, preheat the oven and a pizza stone at 500˚ F for at least 30 minutes.  Roll out the pizza dough into a 12-14 inch round.  Lightly brush the perimeter of the dough with olive oil.  Spread a thin layer of the white sauce over the crust, leaving a border clear around the edge for the crust.  Sprinkle the torn spinach leaves over the white sauce.  Evenly distribute the broccoli florets over the dough.  Layer evenly with the shredded mozzarella and cheddar cheeses.  Finish with additional grated Parmesan, if desired.  Transfer the pizza to the preheated pizza stone and bake until the cheese is melted and bubbling and the crust is lightly browned, about 10-12 minutes.  Remove from the oven and let cool slightly before slicing and serving.

Pizza Bites

Ingredients:
½ batch pizza dough (enough for 1 pizza)
4 oz. mozzarella cheese, cubed (about 20-24 pieces)
Sliced pepperoni
For topping:
Olive oil
Italian seasoning
Grated Parmesan cheese
Directions:
Preheat the oven to 400˚ F.  Lightly grease a 9-inch pie plate or cake pan.  Divide the pizza dough into 20-24 roughly equal sized pieces.  Take one of the dough pieces, top with a cube of cheese and a slice or two of pepperoni.  Pull the edges of the dough around the fillings and pinch closed.  Place seam-side down in the baking dish.  Repeat with the remaining dough pieces.
Lightly brush the tops of the dough balls with olive oil.  Sprinkle with Italian seasoning and grated Parmesan cheese.  Bake for 20 minutes, or until the tops are golden brown.  Serve warm, with dipping sauce as desired.

Thai Chicken Pizza

Ingredients

  • 1 pizza dough, any brand
  • 1/2 cup duck sauce or plum sauce
  • 1/2 teaspoon crushed red pepper flakes
  • 1 package (2 cups) shredded provolone or Monterey Jack cheese
  • 1/2 red bell pepper, thinly sliced
  • 1 tablespoon vegetable oil
  • 2 tablespoons soy sauce
  • 1 rounded tablespoonful peanut butter
  • 2 teaspoons hot sauce
  • 2 teaspoons grill seasoning (recommended: Montreal Steak Seasoning) eyeball it
  • 4 chicken breast cutlets, 1/2 pound
  • 2 tablespoons honey
  • 2 tablespoons rice wine vinegar or cider vinegar
  • 1/4 seedless cucumber, peeled and cut into matchsticks
  • 4 scallions, chopped
  • 1 cup bean spouts, a couple of handfuls
  • Palm full cilantro leaves, chopped
  • 1/4 cup chopped peanuts, 2 ounces

Directions

Preheat oven to 425 degrees F.

Form pizza crust on pizza pan or cookie sheet. Top with duck or plum sauce - spread it around like you would pizza sauce. Sprinkle the pizza with some crushed red pepper flakes then top with cheese and peppers. Bake until golden and bubbly, 15 to 17 minutes.

Preheat a grill pan over medium-high heat. Combine vegetable oil, soy sauce and peanut butter with hot sauce and grill seasoning. Use the microwave to loosen up peanut butter if it is too cold to blend into sauce, 10 seconds ought to do it. Add chicken and coat evenly with mixture. Let stand 10 minutes then grill chicken cutlets 2 to 3 minutes on each side, until firm. Slice chicken into very thin strips.

While chicken cooks, mix honey and vinegar and add the cucumber. Turn to coat evenly.

Top the hot, cooked pizza with chicken, scallions, sprouts and cilantro. Drain cucumbers and scatter over the pizza. Garnish pizza with peanuts, cut into 8 wedges and serve

Mexican Pizza

Ingredients:
Pizza dough
1 can black beans, rinsed and drained
½ tsp. cumin
¼ tsp. paprika
¼ tsp. cayenne
3 tbsp. chicken broth, veggie broth or water
3 oz. shredded cheddar cheese
3 oz. shredded monterey jack cheese
1 jalapeño, seeded and diced
¼ cup red onion, finely chopped
1/3 cup tomato, seeded and diced
1/3 cup corn (fresh or frozen)
3-4 tbsp. chopped fresh cilantro
Salt and pepper, to taste
Directions:
To make the pizza, preheat the oven and a pizza stone at 500˚ F for at least 30 minutes.  Roll out the pizza dough into a 12-14 inch round.  Lightly brush the perimeter of the dough with olive oil.
Combine the black beans, cumin, paprika and cayenne in the bowl of a food processor.  Puree until ground into a paste.  Scrape down the sides of the bowl.  With the processor running, add the chicken broth through the feed tube until a smooth mixture is formed.  Spread the bean puree onto the shaped pizza crust in an even layer (I used about ¾ of the puree).  Layer evenly with the cheddar and monterey jack cheese.  Sprinkle the jalapeño, red onion, tomato, corn and cilantro over the cheese layer.  Season with salt and pepper if desired.
Transfer the pizza to the preheated pizza stone and bake until the cheese is melted and bubbling and the crust is lightly browned, about 10-12 minutes.  Remove from the oven and let cool slightly before slicing and serving.

Garlic Chicken Pizza

Chicken Garlic Pizza
Ingredients:1 chicken breast
salt and pepper
2 tsp. olive oil
2 tbsp. butter
2 cloves garlic, minced
2 tbsp. green onion, chopped
½ tsp. dried basil
2 roma tomatoes, sliced
¼ c. chopped fresh cilantro
½ c. ricotta cheese
¼ c. Parmesan cheese
pizza crust
Directions:Season chicken breast on both sides with salt and pepper. Heat olive oil in a skillet and cook chicken breast until browned on both sides. Cut into chunks and finish cooking until cooked through. In a small saucepan, melt butter with garlic, onion and basil. Pour into a chilled dish to cool and refrigerate until set. Preheat oven to 350°. Spread herb butter over crust. Arrange chicken on top, then dot with ricotta. Top with tomato slices, cilantro, and Parmesan. Bake 15-20 minutes.

Pizza Dough and Sauce

I N G R E D I E N T S :

6 c flour 
(If you mill your own flour, a good combination is to use even amounts of hard red wheat, hard white wheat, and soft white wheat...otherwise, King Arthur White Whole Wheat is a good store bought option).
2 1/4 c water (temp 110-115 degrees)
1/3 c oil
1/3 c honey
1 T yeast
2 tsp salt

D I R E C T I O N S :

If you have a good mixer and won't knead it by hand, combine the water, oil, honey, and salt into the mixer. Mix until well blended.

Next, add half of the flour. Mix until just blended.

Add the yeast, mix again until just blended.

Add remaining flour and mix until just blended. Let it rest for 10 minutes.

Knead for 6 minutes (I knead it in my mixer with the dough hook, or you can knead by hand).

Once the dough has finished kneading, simply divide it into 2 or 3 dough balls. It makes enough for 2 thick crust pizzas or 3 thinner crust pizzas. You can also freeze the dough balls (I wrap each one in saran wrap and then put them in a freezer ziploc bag) and let one thaw in the fridge the day you want to make it.


To bake the pizza, roll out the dough, add sauce, cheese, and other toppings, and bake for 10-15 minutes at 425 degrees.

This is the marinara sauce I make. I triple the recipe, freeze in individual cup size portions, and defrost when I am going to be making a pizza. I use 1 cup per pizza.

I N G R E D I E N T S :
3 8-ounce cans tomato sauce
3 tsp. oregano
1/2 tsp. garlic powder
3 Tbsp. parmesan cheese

D I R E C T I O N S:
Combine ingredients in a sauce pan on medium-heat, and simmer for a few minutes before adding to the pizza.
