(adapted from a recipe in Cooking Light)
Makes one 9 x 5-inch loaf
Bread:
- 1 1/2 cups mashed ripe banana
- 1/3 cup plain yogurt
- 1/3 cup peanut butter (I used creamy, but I think chunky would be good too!)
- 3 tablespoons butter, melted
- 2 large eggs
- 1/2 cup sugar
- 1/2 cup packed brown sugar
- 1 1/2 cups all-purpose flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon ground allspice
- Cooking spray
Glaze:
- 1/3 cup powdered sugar
- 1 1/2 tablespoons milk
- 1 tablespoon creamy peanut butter
Preparation:
- Preheat oven to 350 degrees F.
- To prepare bread, combine banana, yogurt, peanut butter, butter, and eggs in a large bowl; beat with a mixer at medium speed. Add sugar and brown sugar; beat until blended.
- Add flour, baking soda, salt, and allspice; beat until just blended.
- Pour batter into a 9 x 5-inch loaf pan coated with cooking spray. Bake at 350 for 50-60 minutes, or until a tester inserted in the center comes out clean. Remove from oven; cool 10 minutes in pan on a wire rack. Remove bread from pan; cool.
